Victoria’s is led day-to-day by co-owners Andrew Berry-Ashpole and Lois Connor - an owner-operator team with a holistic view of hospitality and dining. They collaborate across kitchen and dining room to shape the full experience: what’s on the plate, how the room feels, how the night flows, and how guests are cared for. Together, their complementary standards, instincts, and passion have helped make Victoria’s Hamilton’s favourite dining destination.
Andrew Berry-Ashpole
Andrew Berry-Ashpole is the Co-Owner of Victoria’s, bringing decades of leadership from notable restaurants including Spencer’s at the Waterfront, the nose-to-tail destination The Queen & Beaver, and most recently the globally inspired gem, The Diplomat. At Victoria’s, Andrew helps guide the restaurant’s culinary direction while working side-by-side with Lois to ensure the entire guest experience feels cohesive - warm, polished, and consistently excellent.
With a cherished family heritage as the grandson of a butcher, Andrew believes great dining begins with great sourcing: exceptional proteins, seasonal ingredients, and relationships with the region’s best suppliers. As an owner-operator, he’s involved in the details that guests remember - from the way a cut is selected and cooked to the standards that define Victoria’s night after night.
Lois Connor
Lois Connor is the General Manager and Co-Owner of Victoria’s, and a 20+ year hospitality veteran known for calm leadership, genuine warmth, and impeccable attention to detail. She notices the small things that shape a great evening—the pacing of the room, the timing at the table, and the subtle cues that tell you when to guide and when to give guests space.
With early experience in Toronto’s evolving dining scene and training in acclaimed restaurants, Lois developed a service style that feels elevated and welcoming. Her background as a wine director - supported by studies with the International Sommelier Guild - brings confident, approachable recommendations to everything from date nights to milestone celebrations. She leads from the floor, setting the standard for the polished, personal hospitality that defines Victoria’s.
